  • Large eggplant
  • Half a liter of water
  • Juice of 1 lemon


First, peel the eggplant from the peel and cut it into cubes.
Then put it in a bowl with cold water (half a liter) and leave to soak for a couple of hours. You can leave the eggplant soaked overnight so that it’s ready in the morning. After soaking, put the eggplant water on the fire and wait until the water boils. Let it simmer for at least 15 minutes.
